Ingredients
- 4 large fresh egg yolks
- 250ml heavy whipping cream
- 50g superfine sugar
- 1 whole vanilla bean, split and scraped
- 4 tbsp demerara sugar (for caramel crust)
Steps
- Preheat oven to 150°C (300°F). Heat cream and scraped vanilla seeds until just simmering.
- Whisk egg yolks and superfine sugar in a bowl. Slowly temper hot cream into eggs while whisking.
