- 200g premium spaghetti pasta
- 100g pancetta or guanciale, cubed
- 2 large fresh egg yolks
- 1 whole fresh egg
- 50g Pecorino Romano cheese, grated
- 1 tbsp black truffle paste (or truffle oil)

Steps
- Bring a large pot of salted water to a boil and cook the spaghetti until al dente.
- While pasta cooks, cook pancetta in a pan over medium heat until crispy. Remove pan from heat.
