3. [0:29](https://www.youtube.com/watch?v=lCuP3_dMtpA&t=29s) Cut the onion in half lengthwise and slice into four wedges along the grain, leaving the bottom attached.

11. [2:31](https://www.youtube.com/watch?v=lCuP3_dMtpA&t=151s) Pour in dashi stock, sugar, and sake, then submerge the sugar and cover with a paper towel drop-lid and a tight-fitting lid.
12. [3:18](https://www.youtube.com/watch?v=lCuP3_dMtpA&t=198s) Simmer for 10 minutes.
13. [3:35](https://www.youtube.com/watch?v=lCuP3_dMtpA&t=215s) Remove the paper towel lid, pour in soy sauce, and swirl the pan.
14. [4:16](https://www.youtube.com/watch?v=lCuP3_dMtpA&t=256s) Cover again with the paper towel drop-lid and lid, and simmer for another 10 minutes.

16. [4:27](https://www.youtube.com/watch?v=lCuP3_dMtpA&t=267s) Add snow pea pods, cover, and simmer for 1 more minute.
17. [4:35](https://www.youtube.com/watch?v=lCuP3_dMtpA&t=275s) Remove snow peas to prevent discoloration, turn off the burner, turn the ingredients over, and let sit covered to cool.
