Beef and Broccoli Stir-Fry

Ingredients

  • 2 cupsLong-grain white rice, rinsed
  • 600 gBeef stir-fry strips, pat dry
  • 1 large headBroccoli, cut into bite-sized florets
  • 3 clovesGarlic, minced
  • 1 inch pieceFresh ginger, grated
  • 45 mlSoy sauce
  • 30 mlOyster sauce
  • 15 gCornstarch
  • 30 mlCanola oil
  • 4 gSalt
  • 2 gGround black pepper

Method

  1. Rinse 360 g white rice under cold water until the water runs clear. Combine the rice with 720 ml water in a medium pot. Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 10 minutes. Fluff with a fork.⏱ 25 min timer in cook mode
  2. While the rice cooks, pat the 600 g beef stir-fry strips dry. In a small bowl, whisk together 30 ml soy sauce, 15 ml oyster sauce, 15 g cornstarch, and 120 ml cold water to create the sauce. Mince the 15 g garlic and grate the 10 g fresh ginger. Cut the 400 g broccoli into bite-sized florets.
  3. Heat 15 ml canola oil in a large skillet or wok over medium-high heat. Add the broccoli florets and 60 ml water. Cover and steam until tender-crisp, about 3-4 minutes. Transfer the broccoli to a plate.⏱ 4 min timer in cook mode
  4. Add the remaining 15 ml canola oil to the skillet. Add the beef strips and season with 4 g salt and 2 g black pepper. Stir-fry until browned and cooked through, about 3-5 minutes. Remove the beef from the skillet and set aside with the broccoli.⏱ 4 min timer in cook mode
  5. Reduce heat to medium. Add the minced garlic and grated ginger to the skillet and stir-fry for 30 seconds until fragrant. Whisk the prepared sauce mixture again and pour into the skillet. Cook, stirring constantly, until the sauce thickens, about 1-2 minutes.⏱ 3 min timer in cook mode
  6. Return the cooked beef and broccoli to the skillet with the sauce. Add the remaining 15 ml soy sauce and 15 ml oyster sauce. Toss to coat everything evenly and heat through, about 1 minute.⏱ 1 min timer in cook mode
  7. Serve the beef and broccoli stir-fry immediately over the cooked white rice.
