Classic Meatloaf with Mashed Potatoes

Ingredients
- 600 gLean ground beef
- 880 gYellow potatoes, peeled and cut into 1-inch chunks
- 300 gGreen beans
- ½ mediumYellow onions, minced
- 1Large eggs
- 50 gPlain breadcrumbs
- 125 ml2% milk
- 30 gSalted butter
- 60 mlKetchup
- 15 mlCanola oil
- 7 gSalt
- 3 gGround black pepper
Method
- Preheat oven to 375°F (190°C). Heat 15 ml canola oil in a small pan over medium heat. Add the 125 g minced yellow onion and cook until softened, about 5 minutes. Remove from heat and let cool slightly.⏱ 5 min timer in cook mode
- In a large bowl, combine the 600 g ground beef, cooled cooked onion, 1 egg, 50 g breadcrumbs, 3 g salt, and 1.5 g black pepper. Mix gently until just combined. Form into a loaf shape on a baking sheet. Spread 60 ml ketchup over the top of the meatloaf.
- Bake the meatloaf for 45 minutes, or until the internal temperature reaches 160°F (71°C).⏱ 45 min timer in cook mode
- While the meatloaf bakes, place the 880 g peeled and cut potatoes in a large pot, cover with cold water, and add 2 g salt. Bring to a boil over high heat, then reduce heat and simmer until fork-tender, about 15 minutes.⏱ 15 min timer in cook mode
- In the last 10 minutes of meatloaf cooking, steam or boil the 300 g green beans until tender-crisp, about 5 minutes.⏱ 5 min timer in cook mode
- Drain the cooked potatoes. Return to the hot pot. Add 125 ml milk, 30 g butter, and 2 g salt. Mash until smooth and creamy.
- Remove meatloaf from oven and let rest for 5 minutes before slicing. Serve with mashed potatoes and green beans.⏱ 5 min timer in cook mode
