Ingredients
- 1 cup organic quinoa
- 2 cups low-sodium vegetable broth
- 1 ripe avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 2 tbsp toasted pumpkin seeds
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1/2 tsp sea salt
Steps
- Rinse quinoa thoroughly and boil in vegetable broth for 15 minutes until light and fluffy.
- Let the quinoa cool slightly for 5 minutes.
- Divide the warm quinoa into two serving bowls.
- Arrange avocado slices, halved cherry tomatoes, and toasted pumpkin seeds over the quinoa.
- Drizzle each bowl with 1 tablespoon of extra virgin olive oil and half of the fresh lemon juice, sprinkle with sea salt, and serve.
