Ingredients

  • 2 skinless chicken breasts, pounded thin
  • 1/2 cup whole-wheat breadcrumbs
  • 1 egg, beaten
  • 1 cup fresh crushed tomatoes
  • 1/2 cup low-fat mozzarella cheese, shredded
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • Pinch of sea salt and pepper

Steps

  1. Preheat your oven to 200C (390F) and lightly grease a baking sheet with olive oil.
  2. Season the thin chicken breasts with sea salt and black pepper.
  3. Dip each chicken breast into the beaten egg, then press into the whole-wheat breadcrumbs until fully coated.
